Winter Warmer Soup

As it's cold and dark February day today I feel compelled to share one of my soup recipes with you.  I love soup.  I love the process of chopping up all the colourful ingredients and stirring them round in a big pot, sprinkling herbs here and there and adding a bit of this and that.  I feel a bit like a witch (a white one of course) and funnily enough my cat always makes an appearance, her little head darting from side to side as I reach from the cupboard to the cooker.  (I will introduce you later).  This is a recipe I brought back from a holistic holiday in Lanzarote (bliss) where I was introduced to a vegan diet.  I later returned to eating meat, however, I ate so well during that holiday and was positively glowing with energy when I returned home. Clover Yard Winter Warmer Soup
Serves 4

2 large sweet potatoes diced
1 large onion diced
2 vegetable stock cubes
dash of tabasco
one third of a tin of coconut milk or soya milk
2 tsp corriander powder
2 tsp cumin powder
1 tsp ginger powder or 1 inch fresh grated ginger
2 tbsp olive oil
1 tsp curry powder or 1 tsp turmeric
1-2 tbsp tamari (wheat-free japanese soya sauce)
half a lemon

Method

Saute onions with all the spices for 5 mins on a medium heat.  Put everything in except the coconut milk and olive oil.  Simmer for 20 mins or until potatoes are soft.  Put in blender and add coconut milk and olive oil.  Blend until smooth.  Add to this the juice of half a lemon which will round off all the flavours.

Pour into bowl, pop on a tray, sit in front of the fire and enjoy!
